Customer Review: Great gift. Got this for Christmas and I love it. I always wanted to know what a particular ingredient did and this book answers those questions. I've baked for years but didn't fully understand some of the "why's" certain things were done.
Customer Review: This book is great to use as a reference tool. The author departs both, scientific insight as to "how and why" things are in the cooking world and practical recipes with which to experiment using her tips. I highly recommend this book for beginners to intermediate level cooks.
